Apple Pie Ale

Yesterday we brewed apple pie ale.  This is the first time I used the Beersmith software to fine-tune my recipe, and I'm very pleased with how easy it was.  All of the brew's details, right down to the amount of time and temperatures in fermentation were programmed into the software.  I could print out a basic shopping list, and headed off to the homebrew supply store.

Apple pie ale is in the style of a Belgian Blond Ale, and was brewed with pilsner and extra light malts, East Kent Goulding and UK Northdown hops, with 2 cinnamon sticks added in at the end of the boil.

Primary fermentation is just a standard week in a 5 gallon carboy, but secondary will be transferred into my brand new 6.5 gallon carboy, and have a gallon of organic apple cider added to it, along with some nutmeg, and possibly another cinnamon stick if the taste isn't there.

After a month in bottles, if I stay on schedule, this beer will be ready to crack open on 1 March, just in time for the weather to start hinting about Spring.

Cheers.

First action of 2012

Sorry for the lapse again...

Wedding planning, and a move have taken precedence over brewing, as I didn't want to have anything carbonating/fermenting while I had to move it all, but now that I'm all settled in the new place, we can pick up where we left off.

Saturday will be the supply run to the homebrew store to gather ingredients for Sunday's brewing of apple-pie ale.  Wish us luck.
